The Somm & The Winemaker Mourvedre

Tasting Notes: Distinctly spiced with clove and black pepper.  Broody fruit with hint of dark chocolate, sour cherry.  Supple chewy texture.

Food: Scotch on the Bone with chimichuri

Season: A fantastic growing season with loads of Winter and Spring rains. The Summer was milder than the usual high Canowindra temperatures. A wonderful retention of natural acid was seen across all varieties.

Winemaking Notes:

40% whole bunch.  Cold soak for 4 days before wine started to ferment with native yeast.

Racked with fine solids to older french barriques for maturation.

Sulfured in spring with racking.

Minimal Filtration. No fining. Vegan friendly.
