The Somm & The Winemaker Arneis
A sunny disposition of citrus blossom & honeydew melon on the bouquet… much like that of a Sommelier introducing you to a new wine she has discovered. The palate… finely detailed with bright acidity, parmesan rind & a chalky grip reflecting the precise nature of a winemaker. Arneis, a friendly & peculiar Italian varietal that brought two school friends together again to produce a wine of passion, place and memories. We hope you enjoy drinking it as much as we enjoyed making it.
Food: Chicory Risotto
Season: A Cool wet season. Vines were shoot thinned and leaf plucked to reduce disease pressure and keep canopies open and dry.
Winemaking Notes:
Hand harvested Cooled overnight before processing.
Crushed and basket pressed- keeping pressing fraction separate.
Free run fermented in old French barriques with native yeast.
Pressings were hyperoxidized to knock out harsh phenolics, then racked to older French oak for ferment with native yeast.
Matured on fermentation lees until spring.
Minimal fining and sulfur additions prior to bottling.
