The grapes were hand pick early February from our Sweetwater Rd vineyard. After a nine day fermentation the wine was basket pressed into French oak hogsheads and matured for 12 months. A cool growing season provided for high natural acidity and delicate tannin structure with red fruits, white pepper and spice.
