Tasting Notes: Elegant, focused with complex tapestry. Perfumed and pretty with roses petal, subtle spice and a hint of violet. Palate is fine with ripe mulberry, clove, cinnamon and supple tannins.
Food: Herb crusted venison chops
Season: A long cool season. A wet and cool spring followed by a mild and reasonably dry summer. Vines were shoot thinned and leaf plucked to reduce disease pressure and keep canopies open and dry.
Winemaking Notes:
Grapes were left to cold soak with hand-picked 50% whole bunch for 3 days prior to fermentation with native yeast.
Some time of skins post fermentation to build savoury interest and depth before being pressed.
Racked to barrel with fine solids for MLF.
Minimal filtration and sulfur additions prior to bottling in June 2024.
No fining = Vegan Friendly.
