Tasting Notes: Blueberry and ripe Marion berry, taut black-skinned plum, a rustic note of oregano and moist dirt. Assertive acidity and lacy tannins knit together with the soft fernery of the whole bunch.
Food: Venison Carpaccio
Season: A warm wet spring followed by a hot and reasonably dry summer, with rain at welcomed intervals. Vines were shoot thinned and and crop reduced to balance vines. Beautiful ripeness from the 2025 season with freshness and power across all varieties. .
Winemaking Notes:
115+114+667 clones hand-picked from top block were fermented with 40% whole bunch.
777+114+115 clones from Henry Lane was fermented as 40% whole bunch.
Grapes were left to cold soak for 4 days prior to fermentation with native yeast.
Some time on skins post fermentation to build savoury interest and depth before being pressed.
Racked to barrel with fine solids for MLF.
Minimal filtration and sulfur additions prior to bottling. No fining = Vegan Friendly
