🛒 Ingredients:

  • 1 pack Swiss Bratwurst (750g total)
  • 1kg potatoes, peeled and cut into 2cm chunks
  • 2 brown onions (500g), sliced
  • 4 cloves Australian garlic, minced
  • 400g gourmet tomatoes, roughly chopped
  • 2 carrots, diced
  • 1 jar Burton's Lane Curry Paste
  • Fresh coriander bunch for garnish

Pantry staples:

  • 2 tbsp olive oil
  • 400ml coconut cream
  • 2 cups beef or vegetable stock
  • Salt and pepper to taste

🔪 Instructions:

1. Brown the sausages: Heat 1 tbsp olive oil in a large, heavy-based saucepan over medium-high heat. Add sausages and brown all over (about 5-6 minutes). Remove and set aside – they don't need to be fully cooked yet.

2. Build the base: In the same pan, add remaining oil and sauté onions until softened (about 4 minutes). Add garlic and cook for another minute until fragrant.

3. Add the curry paste: Add 2-3 tablespoons of Burton's Lane Curry Paste (adjust to taste). Stir for 30 seconds until aromatic and everything is well coated.

4. Add the vegetables: Add potatoes, carrots, and chopped tomatoes to the pan. Cook for 2-3 minutes, stirring to coat everything in that gorgeous curry paste.

5. Simmer and develop: Pour in coconut cream and stock, and season with salt and pepper. Return sausages to the pan, nestling them into the vegetables.

6. Let it bubble: Bring to a gentle simmer, reduce heat to medium-low, and cover. Cook for 15-18 minutes until potatoes are tender and the sauce has thickened. The sausages will be perfectly cooked and have absorbed all those wonderful curry flavours.

7. Finish and serve: Taste and adjust seasoning - you can add more curry paste if you want extra heat. Garnish with fresh coriander and serve immediately.
