Tender pork ribs slow-cooked to perfection, glazed with a sweet and tangy apple-fig sauce—ideal for cosy family dinners as the leaves change and temperatures drop.

🛒 Ingredients

From YourMarket:

  • 1.5–2 kg Australian pork spare ribs – ~$25.00

  • 2 Red Delicious apples – ~$3.00

  • 2 Sundowner apples – ~$3.00

  • 1 jar Just Homegrown Fresh Fig Chutney – $15.00
    A rich, sweet chutney that pairs beautifully with pork.

  • 1 jar Just Homegrown Traditional Tomato Sauce – $15.00
    A classic sauce to add depth to the glaze.

Pantry Staples (not on YourMarket):

  • 2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 2 tablespoons brown sugar

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon ground cinnamon

  • Salt and pepper to taste


🍽️ Instructions

  1. Prepare the Ribs:
    Preheat your oven to 150°C. Season the pork spare ribs with salt and pepper. Place them in a roasting pan or baking dish.

  2. Make the Glaze:
    In a saucepan over medium heat, combine:

    • Chopped Red Delicious and Sundowner apples

    • 1 jar Just Homegrown Fresh Fig Chutney

    • 1 jar Just Homegrown Traditional Tomato Sauce

    • Olive oil, Dijon mustard, brown sugar, apple cider vinegar, and ground cinnamon

    Cook until the apples are soft and the mixture thickens into a glaze (about 15 minutes).

  3. Apply the Glaze:
    Brush the glaze over the ribs, covering them evenly.

  4. Slow-Cook the Ribs:
    Cover the roasting pan with foil and bake for 2.5 to 3 hours, or until the ribs are tender.

  5. Caramelize the Glaze:
    Remove the foil, increase the oven temperature to 200°C, and bake for an additional 15 minutes to caramelize the glaze.

  6. Serve:
    Slice the ribs and serve hot with your choice of sides, such as roasted vegetables or mashed potatoes.
