A warming, one-pot winter meal the whole family will love.
There's something about a tagine that just makes sense in May. The nights are drawing in, the pumpkins are at their best, and you want something that fills the house with warmth and takes care of itself while you get on with the evening. This one does exactly that.
It's vegetarian, it's hearty, and it comes together in under 30 minutes on the stovetop — or you can throw it in the slow cooker in the morning and come home to dinner already done. The secret ingredient is Just Homegrown's Tomato & Chilli Chutney, which adds a depth you just don't get from plain tinned tomatoes alone. Indian spice base, garlic, cumin, and a little heat — it does a lot of the flavour heavy lifting so you don't have to.
Ingredients (Serves 4–5)

- 1 tablespoon oil
- 3 cloves garlic, crushed (from Martelli Orchards here)
- 1 tsp ground cumin
- 1 tsp ground sumac
- 1 tsp ground coriander
- 2 tbsp Just Homegrown Tomato & Chilli Chutney (from Just Homegrown here)
- 400g diced tomatoes (from Martelli Orchards here)
- ½ bunch flat-leaf parsley, chopped (from Martelli Orchards here)
- ½ bunch fresh coriander, chopped (from Martelli Orchards here)
- 600g pumpkin, peeled and chopped (from Martelli Orchards here)
- 400g canned lentils, chickpeas, or beans
Method
Heat oil in a large saucepan and sauté onion until soft. Add garlic, then the dry spices, and cook for 30 seconds until fragrant. Add the diced tomatoes, chutney, and half the fresh herbs and stir to combine. Add the pumpkin and lentils/chickpeas/beans, cover, and simmer for 20 minutes or until the pumpkin is tender.
Slow cooker option: Transfer everything to your slow cooker after the spice step and cook on HIGH for 4 hours or LOW for 8 hours.
Serve topped with the remaining fresh herbs and a side of wilted or steamed leafy greens.
A note on the chutney
